Cakes & Pies
Any way you slice them, cakes and pies remain the perfect treats for small gatherings. And who doesn’t love a portionable treat for their birthday, family holiday or dinner party?
Chocolate-Banana Pudding Cake
Apparently, I’ve been living under a rock. Pudding cake is not only an easier recipe to manage than the recipe on the back of a Duncan Hines box, but it is also moister and more flavorful, better at holding its shape and longer lived if you somehow manage leftovers.
Coconut Cheesecake
One day while walking through the ethnic food section of the local supermarket, I eyeballed a can of cream of coconut and decided there must be a way to make two of my favourite foodstuffs—coconut and cheesecake—mesh. And with a little tweaking, and a lot of crossing extremities, I managed to create this quite simple, yet very tasty variation on the classic cheesecake.
Portal Cake
Based on an “Easter egg” in the video game “Portal,” the fan-created cake is just your basic devil’s food cake with chocolate frosting. The fun is in the garnishing.
Cherry Streusel Pie
While popularized as the topping of the Dutch apple pie, I’ve found streusel goes just as well on the cherry variety. Quick and easy, the crumbly concoction is a terrific makeshift crust that adds an extra yum in every slice.
No-Bake Cheesecake Pie
Creamy, simple, divine. Among my favorite childhood desserts, the no-bake cheesecake pie still holds a special place in my heart.
Shoofly Pie
Shoofly Pie’s thick molasses base fills your palate with rich flavor. You have to have a real love for the stuff to appreciate it. But if you’re willing to give it a try—perhaps with a little vanilla ice cream incentive—it’s a great alternative for the traditional sweet fruit pies.
Strawberry Lemon Cheesecake Tart
Fresh, juicy strawberries? Tangy lemon? Minimal baking yet maximum yum? This cool, creamy tart is a perfectly flavorful summer treat.
